Anything you shoot down in air combat should create a ground mission. With wreckage you can retrieve and research. The mission might be at whatever existing location is near. If that's simpler to fit on the Geoscape.

You are thinking of xcom now. But the ships are in this are no longer alive when they crash, so your faction is granted a payment for the result instead of you needing to send troopers.
