As you can see from this picture;
We cannot select the priest head mutations, not the Resistor head mutation. And yes, I used the redit picture, but I have the very same thing happen, on PC, so.

Fixed an issue where the priest head mutations were not available on the Mutations screen.

Yes, this is alredy known issue that will be fixed withn a weeks update, source:
